Rice kheer shots..
Ingredients
Rice 2 to 3 tbsp
Milk 1 litre
Sugar 5 tbsp (adjust per choice)
Chopped almonds 5
Raisins a few
Rose petals a few
Chironji seeds 1 tbsp
Saffron a few strands
Basil leaves a few
Wash the rice properly and soak for 10 minutes. I used gobindobhog rice. Any short grain rice is perfect for kheer. Add milk in a pan and when it starts boiling add the rice in it. Keep cooking till the milk is reduced to half.
See that the rice is tender.
Add the saffron strands and sugar to the kheer. Mix well and keep cooking on low flame. Keep stirring and scraping the sides so that the milk doesn't stick to walls of the pan.
Cook till the milk is reduced to 1/4th of it's volume. Switch off flame and let cool a bit.
Take shot glasses and add kheer with the help of a spoon. Add chopped almonds.
Add chironji and raisins.
Add a few rose petals and basil leaves.
Serve...
